 ct summertime  meal. If you are looking for new ways to include more sea
 food in your  diet this summer\, the Rutgers Cooperative Extension  of U
 nion County will be offering its popular &ldquo\;Seafood at its Best&rdq
 uo\;  cooking class once again\, complete with food tastings.\nThe two-s
 ession class will be held on Wednesday August 1 and 8\, 2012 from 7 p.m.
  to 9 p.m.\, at the Extension offices in the County Services Building\, 
 300 North Avenue East\, Westfield.\n&ldquo\;After hearing great  things 
 about the &ldquo\;Seafood at its Best&rdquo\; program I am happy to see 
 it  being offered again\,&rdquo\; said Union County Freeholder Linda Car
 ter. &ldquo\;The  class is taught by a Rutgers nutrition expert\, so  th
 is is a good opportunity to learn new recipes while getting reliable  in
 formation about the benefits of seafood.&rdquo\;\nAs part of a healthy d
 iet\, seafood is linked to improved heart health\, brain function and ov
 erall well being. The class\, led by Dr.  Karen Ensle of Rutgers Univers
 ity\, will include information on selecting  and preparing different typ
 es of seafood\, along with food safety tips.\nPre-registration is  requi
