Celebrate Back-to-Back Championships with a Hilltopper Lax Burrito

Titos Burritos will feature special menu item until Monday night's lacrosse parade.

What happens when one high school lacrosse team wins back-to-back state championships, sets a new state record for most consecutive wins and has a player set a school record for most goals scored in a career at Summit High?

A burrito of course!

Titos Burritos created a special burrito to honor the Summit High School boys  lacrosse team after their second state championship victory in two years. The burrito? Similar to the restaurant's signature burrito The Bird, it features chicken, rice, black beans, sour cream and guacamole. The difference? The chicken is in a guajillo chili pepper puree which gives it a smokey, yet mildly spicey flavor. And the tortilla? Nothing but Hilltopper crimson will do!

"It's really just a pride thing," said Titos Burritos owner Mike Caldarella of the idea  behind the burrito.

After five years in Summit, Caldarella said many of the players are Titos best customers.

"We feel like when something good happens in Summit, not to say it in these words but, we want to make a stink," he said.

The guajillo chili comes to Titos whole and then it is ground down into a powder before being turned into a puree to coat the chicken in.

"It's an interetsing spice," Caldarella said. "It's slightly fruity."

The burrito, available only through Monday night when the district will honor the team with a parade beginning at the high school at 6:30 p.m., is $7.95.
