Best of Summit Dish: A Look Back At Delectable Dishes

With Amy on vacation, face it we're starving. So here's some of the best recipes she's shared over the last year.

It's hard to believe that Amy Currie has let us into her kitchen for almost a year.

So 11 months and 47 recipes later, we take a look back at some of the best, and most popular, recipes Amy has shared with Summit Patch readers.

Entrees

  • One of our earliest dishes, Amy showed us how to make a tasty and aromatic fall dish. Anything cooked in Apple Cider is sure to please!
  • In my house we call this simply "Apricot Chicken" but whatever you call it, this dish was far and away one of the most popular we have ever done. Chicken is universal but the simply ingredients in this dish make it a great meal mid-week when you're not sure what to make. 
  • As an Italian woman, I am blessed to have a recipe binder full of family secrets for Italian dishes. But Amy's extremely untraditional spaghetti was actually delicious! It's not fair to compare it to traditional Italian fare but it tastes so much lighter yet is full of all the carbs those young athletes whom Amy created this recipe for need.
  • When I came to Amy desperate for a quick, easy and delicious Friday night dinner, she had just the ticket: pizza! Instead of ordering takeout, with just a few simple ingredients and a little creativity, now you can make a family favorite right in your kitchen.

  • Everyone is Irish on St. Patrick's Day right? Well this year, Amy's dear friend Maura Clarke Perier shared her secret family recipe for Irish Soda Bread with us. Somehow, I felt a little more Irish eating this tasty bread.
  • : When Amy invited the founders of the Summit Bar Method to her house for a demo I couldn't be more excited for a healthy treat. When Jen and Angie brought their kids Amy kicked it up a notch. All I have to say is I never had an after school snack as delicious as a banana boat when I was a kid!
  • : In a twist, I taught Amy a recipe! One of my signature dishes, this chicken dish highlighted by salty green olives is a crowd pleaser. I ever captured the hearts of the Currie kids!
  • : Whether you're a working mom or simply out running errands all day, a crock pot is a life saver. We invited one of the busiest moms we know, Jen Wyckoff, into the kitchen to teach us one of her versatile crock pot recipes.

Breakfast

  • : Asparagus wasn't something I ever thought to put in quiche, but once again, Amy innovates. While we made this dish for Easter, quiche is delightful year round!
  • : If breakfast is the most important meal of the day than I want to have this french toast every, single day. This french toast is one of my new guilty pleasures.

Salad/Soup/Sides

  • : One of my favorite things about Thanksgiving has got to be the potatoes. Mashed. Baked. And yes, scalloped. I devoured this side dish when Amy taught me how to make it.
  • Only Amy can turn a simple salad of tomato and mozzarella cheese into a culinary masterpiece. Roasting peppers at home and creating your own balsamic syrup for dressing will make you feel like a five star chef.

Dessert

  • : I never want birthday cake again. These strawberry cupcakes brought me back to one of my earliest birthdays when my own mom made a tower of strawberry-frosted cupcakes. But as usual, Amy up the anty filling these cupcakes with jam! Not only were they extremely fun to make they had me licking my lips for weeks.
  • : February was clearly the month of desserts with cupcakes for Amy and Heather's birthdays and then Valentine's Day. Instead of making boring brownies, Amy decided to combine two of the best desserts ever invented: ice cream AND brownies. And to reel in us chocolate addicts even more, she made her own chocolate sauce to drizzle all over the sugary concoction.
  • : I can't believe I never thought of this before. Using leftover Halloween candy to bake cookies instead of plain 'ole chocolate chips is quite possibly one of the most delicious and genius ideas Amy has ever shared. You can put any of your favorite Halloween candy in to make a personalized batch just for you! My favorite: cookies and cream cookies!

Appetizers

  • : One of our earliest dishes, Amy captures my fiance Rick's heart instantly with these bacon toasties. In fact, he asks me constantly when we're going to have them again. I mean, to be fair, who doesn't love bacon?
  • : If the fiance loved Bacon Toasties then my mom loved the sausage balls. To be fair, these were also delicious. I'm still recovering from the third degree burns on the roof of my mouth after downing them too quickly. Lesson learned: pace yourself!
  • : I'm the last person you'd expect to like anything with jalapenos in it. But this dip, which Amy whipped out for the Super Bowl, had me coming back for more throughout the entire game.

Snack

  • : Not only did Amy blow me away my popping the popcorn in a pot on my stove, the topping she created is seriously addicting. This popcorn makes any movie night that much better.
