Mangia! Brings Fresh Bread to Farmer's Market

Stand that features stuffed bread helps kick off new season.

Mangia!, a new stand serving fresh bread, is just one of four new stands at the Summit Farmer’s Market.

Dawn Paskalides, freshly makes stuffed breads each day that were taught to her at a young age by her grandmother.

“The breads can be purchased and kept in the freezer for up to three months and take 40 minutes in the oven to heat,” Paskalides said about preparing the food.

Paskalides, who has four children and used to be an elementary school principal, says she runs the stand for a variety of reasons.

“The most important reasons,” she said, “are because I love talking to people and because I absolutely love cooking.”

Mangia! was garnering plenty of customers in its first day at the Farmer’s Market, allowing Paskalides to look ahead on the summer with optimism for her stand.

“My expectations for this summer are to grow my business and connect with more people in the community,” Paskalides said. “I have always tried to get into the Summit Farmer’s Market. I love the town and the quality of the vendors; I jumped at the opportunity to be a part of it when I got the call.”

Each stuffed bread is $20. According to the flier provided by Paskalides at her stand, each of the breads serves approximately 12 people.

Paskalides does not confine her skills to only her stand, though.

“I cater year-round,” she said. “I also do a two-times a year charity event for single mothers. We have raised over $30,000 for 30 single mothers in Chatham.”

The current flier that Paskalides hands out at the stand includes more than 20 breads, ranging from “The Roma,” which contains salami, pepperoni, provolone cheese, and mozzarella cheese, to “The Mediterranean,” which includes black/green olives, feta cheese, and red onions.

She also has her own versions of “The Reuben” and “Philly Cheese Steak.”

This is the first of four feature stories on the brand-new stands at this year’s Farmer’s Market. The market is open from 8 a.m. until 1 p.m. every Sunday and is located in downtown Summit.
